So our biggest challenge will be coming up with the energy to cook food every meal to eat to get more energy!
Granted, I am probably so low energy because my 10 month old has never slept thru the night, or more than 3 hrs at a time. Not good for the old mama. So I have very low energy or enthusiasm as of late and will struggle to be able to provide healthy food for each meal for the next 40 days.
Also, it is full-blown winter now, and, being in Michigan, we receive very little sun from Nov-March. It's a long time to be without sunshine. We also live above the 42nd latitude, so even if the sun is out, doesn't provide enough vitamin-D anyway.
It's already been a brutal month of December, when we usually have mild temps this time of year. So we are already cooped up most of the time. We may take Jordan Rubin's advice and replace at least our kitchen lights with full-spectrum lighting. Apparently this will actually allow your body to make Vitamin D indoors!!
This will help, and maybe during this 40day adventure, Willa will learn to sleep thru the night!
Sometimes (ok, most times lately) I don't even have the energy to cook or clean or play with the kids. All I want to do is sleep.
Justin is pretty pessimistic about this challenge as well. He doubts we can do it, and doesn't want to try for fear of failure. So we are really encouraging each other, ha ha!
